Easy Oven Roasted Potatoes: this recipe is made with simple wholesome ingredients featuring the basic russet potato which is high in fiber and nutrients.

It’s definitely a satisfying side dish that can be added to any meal!

Easy Oven Roasted Potatoes

I’ve made this recipe at least 20 times, after perfecting it. It was a challenge to get the potatoes just the right amount of crispness but boy was it worth it!

And don’t let the amount of time dissuade you from making this recipe. It’s super simple to make.

Simple Steps to Make This Oven Roasted Potatoes Recipe

You can use any type of potato you prefer. I like to use russet (since they are so reasonably priced and work well), or red potatoes.

First, do your best to evenly chop the potatoes into about 1-inch cubes/slices.

Next, place them in a microwave-safe bowl with a few tablespoons of water. Cover the bowl and microwave for 10 minutes.

Carefully remove the bowl from the microwave and let it sit for about 5 minutes or until it’s cool enough to handle.

Drain out the remaining water from the container.

Next, add the oil and all spices to the bowl and stir until the potatoes are well coated.

Then, add the potatoes in a single layer to an 11 x 17 rimmed pan, lined with aluminum foil.

I also like to spray the foil with non-stick spray to help reduce the number of potatoes sticking to the pan.

Finally, cook in the oven for 30 minutes at 400 F, stir the potatoes and flip them over, then cook for another 15 minutes.

Differences in Common Types of Potatoes

You may wonder what potatoes you should use for what recipe. Check out the following descriptions and ideas of how to cook with the various kinds of common potatoes.

Russet Potatoes

  • Brown skin, white flesh
  • Great for making mashed potatoes or pan-fried potatoes

Red Potatoes

  • Deep red and smooth skin with white firm flesh
  • Great for roasting or grilling

White Potatoes

  • Thin skin, so no need to peel before cooking
  • Known as the “all-purpose” potato
  • Best for frying, mashing, steaming, boiling or in potato salads

Yellow Potatoes

  • Yellow flesh with a buttery flavor
  • Great for baking, boiling, roasting or mashing

Tips for Storing Potatoes

  • Keep potatoes in a well-ventilated location – ideally at a temperature between 45ºF and 55ºF. And store them somewhere you won’t forget! I’ve made the mistake of “hiding” them from myself – that didn’t end well.
  • Do NOT wash potatoes before storing them since the moisture will cause them to spoil quicker.

My family absolutely loves these potatoes whether it be with eggs for breakfast or as a side dish for lunch or dinner.

It really doesn’t matter what I’m serving, they’ll eat them with whatever.

Potatoes are notorious for getting a bad rap. Whether it be from carbohydrate avoiders (aka most diets), or people with diabetes who fear carbohydrates.

However, individuals with diabetes CAN and SHOULD eat potatoes/carbs as well as most other individuals – not including those allergic to potatoes – haven’t heard of this but I’m sure someone is.

Does this mean we should regularly eat French fries or fried potatoes or hash browns on a regular basis?

No.

This does mean you can enjoy potatoes as part of a balanced diet. This includes baked potatoes, these oven baked roasted potatoes or potatoes added to soups and stews.

In one medium potato, you’ll get only about 110 calories and several beneficial vitamins and minerals.

Oven Roasted Potatoes

Cook Time 45 minutes
Total Time 1 hour 5 minutes

Ingredients
  

  • 4 medium russet potatoes
  • 3 tablespoons olive oil or canola oil add more or less as desired
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste
  • fresh parsley optional

Instructions
 

  • Scrub and remove any dirt from potatoes.
  • Chop potatoes into equal-size parts (about 1-inch cubes).
  • Add potato cubes to a 2 or 2 1/2-quart microwave-safe dish. Add about 1/4 cup of water to the dish.
  • Cover the dish and cook in the microwave for 10 minutes on high. Be careful when removing, it will be very hot!
  • Preheat oven to 400 F.
  • Once potatoes are done in microwave, carefully pour out the water, leaving the potatoes in the dish. Add the olive oil and spices to the dish and stir well.
  • Line an 11 x 17-inch rimmed baking pan with aluminum foil and spray with non-stick cooking spray.
  • Add the seasoned potatoes to the baking pan in a single layer.
  • Bake in the oven for 30 minutes, flip the potatoes and bake for an additional 15 minutes.
  • Top with fresh parsley if desired.
