Summer is in full swing around here, and what better way to celebrate than with no bake treats. These bites are simple to make and so delicious. I made them for our Memorial Day weekend celebration and are planning on making them again soon for the 4th of July.

When it comes to summertime, I’m all about quick meals along with simple treats that don’t require turning on the oven. At least I try to limit oven time since it heats up my kitchen way too quickly.

Ingredients Needed for This No Bake Patriotic Cheesecake

Graham Cracker Crust

  • graham crackers
  • butter
  • brown sugar

Cheesecake

  • cream cheese
  • whipped topping
  • powdered sugar
  • vanilla extract
  • lemon juice
  • fresh berries

Simple Steps to Make This No Bake Patriotic Cheesecake

First, soften the cream cheese. You can either do this by placing it on your counter for several hours, or using your microwave.

I don’t always plan to make treats ahead of time so I’ll typically use the microwave. Just be sure to use a lower power setting or the “soften cream cheese” option if you have it.

Now, preheat your oven.

Crush the graham crackers in a food processor. If you don’t have one, place them in a sealed plastic bag and crush them with a rolling pin.

Melt the butter in the microwave and stir in the crushed graham crackers and brown sugar.

Divide the mixture evenly to the bottom of a 12-muffin pan and chill in the refrigerator for at least 20 minutes.

Now to make the cheesecake filler, start by combing the cream cheese, whipped topping, powdered sugar and lemon juice. Mix well until thoroughly blended.

Next, add the filler to each muffin cup and top them with berries. Finally, keep it in the refrigerator until ready to serve.

Ingredients
  

Graham cracker crust

  • 1 sleeve graham crackers (about 1 1/2 cups crushed)
  • 6 tablespoons butter
  • 1/4 cup brown sugar

Cheesecake

  • 1 (8-ounce) package cream cheese, softened
  • 4 ounces whipped topping (Cool Whip)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1-2 cups fresh berries

Instructions
 

  • Preheat oven to 350°F.
  • Crush graham crackers using a food processor or place them in a sealed bag and crush with a rolling pin.
  • Melt butter in microwave.
  • In a bowl, combine melted butter, crushed graham crackers, brown sugar.
  • Stir until well combined and add evenly to a 12-muffin pan.
  • Let chill in the refrigerator for about 20 minutes.

To Make Cheesecake

  • In a large bowl combine cream cheese, whipped topping, powdered sugar, vanilla extract and lemon juice. Mix well until thorough blended.
  • Add equal amounts of the cream cheese mixture on top of the graham cracker crust.
  • Top each with fresh berries.
  • Place in freezer, then when ready to serve, let thaw on counter for about 20-30 minutes.
