No Bake Patriotic Cheesecake

Ingredients
  

Graham cracker crust

  • 1 sleeve graham crackers (about 1 1/2 cups crushed)
  • 6 tablespoons butter
  • 1/4 cup brown sugar

Cheesecake

  • 1 (8-ounce) package cream cheese, softened
  • 4 ounces whipped topping (Cool Whip)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1-2 cups fresh berries

Instructions
 

  • Preheat oven to 350°F.
  • Crush graham crackers using a food processor or place them in a sealed bag and crush with a rolling pin.
  • Melt butter in microwave.
  • In a bowl, combine melted butter, crushed graham crackers, brown sugar.
  • Stir until well combined and add evenly to a 12-muffin pan.
  • Let chill in the refrigerator for about 20 minutes.

To Make Cheesecake

  • In a large bowl combine cream cheese, whipped topping, powdered sugar, vanilla extract and lemon juice. Mix well until thorough blended.
  • Add equal amounts of the cream cheese mixture on top of the graham cracker crust.
  • Top each with fresh berries.
  • Place in freezer, then when ready to serve, let thaw on counter for about 20-30 minutes.
