Red White and Blue Patriotic Poke Cake

This Red White and Blue Patriotic Poke Cake is a fun dessert for any patriotic holiday but can also be customized for any party!

I always love when I discover recipes first hand instead of just searching online hoping to find a winner. I could always come up with “original” ideas myself, which I do believe some bloggers do, however, I tend to find recipes I enjoy, then revamp them to make them healthier OR just add a few twists to the original recipe. This recipe was one that I have enjoyed from a long-time friend and I couldn’t wait to make it myself.

My friend has made this cake and brought it to several playdates and it’s devoured in seconds (by moms and kids alike!). I finally wrote down the recipe the way she made it so I could copy the recipe or add a bit to it to make it my own for the blog. I decided Mother’s Day was the perfect occasion to test it out since we were having my entire family over and I wanted to have more than just our immediate family enjoy it (besides the fact that I didn’t want this entire cake sitting in my house just asking for me to eat a bunch of it.

It was quite fun to make with the kids. As you can imagine, they especially enjoyed the “poking” of the cake. If you’ve never made “poke” cake before, just make sure you make it at least a day in advance since you want the cake to cool completely before poking it, and you also need time for the jello to set into the cake. I definitely plan to make this cake several more times including for Memorial Day weekend, 4th of July festivities and likely a Labor Day gathering as well. My entire family loved it!

Red White and Blue Patriotic Poke Cake

Prep Time 2 hours 20 minutes
Cook Time 30 minutes
Total Time 2 hours 50 minutes

Ingredients
  

  • 1 white cake mix box
  • 1 3 ounce jello box (blue flavor)
  • 1 3 ounce jello (red flavor)
  • 2 cups hot water
  • 1 cup water
  • 1 teaspoon vanilla extract

Whipped Topping

  • 1/2 cup powdered sugar
  • 8 ounce cream cheese softened
  • 1 8 ounce container whipped topping
  • Fresh strawberries and blueberries

Instructions
 

  • Bake cake according to directions on a 9 x 13 in pan.
  • Allow cake to cool completely.
  • Poke several holes in cake with the end of a wooden spoon.
  • Make each jello flavoring with 1 cup of hot water and 1/2 cup cold water. Note: this is less water than what is listed on the jello box.
  • Pour each jello carefully into holes in cake, trying to keep colors separate.
  • Refrigerate for several hours or overnight.
  • For whipped topping: mix cream cheese, vanilla, powdered sugar and whipped topping together until smooth.
  • Spread over top of cake.
  • Top cake with strawberries and blueberries.
