Roasted Vegetables with Apples

Apples and Michigan go quite hand in hand. For as long as I can remember my family and I visited the apple orchard and my absolute favorite part was hand-picking apples from the trees.

And now as our kids are getting older I plan to continue the tradition.

This recipe was closely adapted from this recipe that I sampled on my Michigan Apples blogging trip last fall.

These Apple and Oat Breakfast Bars I made last week were also inspired by Michigan apples.

As you likely know my favorite method of cooking vegetables these days is to roast them and add some simple seasoning to them.

However, this recipe takes roasting to an entirely different level with the sweetness from the apples and the savory taste of the balsamic vinegar.

Simple Ingredients Needed for This Roasted Vegetables with Apples Recipe

  • tart apples
  • baby carrots
  • onion
  • redskin potatoes

Dressing

  • olive oil
  • balsamic vinegar
  • dried thyme
  • dried parsley
  • salt and pepper

Dietitian’s Dish

Apples are budget-friendly, easy to eat and very nutritious.

An easy sell when it comes to taste and nutrition.

A medium apple has about 95 calories and 4 grams of fiber. Apples are also a good source of vitamin C (immune-boosting vitamin). 

Roasted Vegetables with Apples

Ingredients
  

  • 2 medium tart apples peeled and chopped
  • 2 cups baby carrots
  • 1 large onion cut into wedges
  • 1/2 pound redskin potatoes cut into quarters
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425°F. Add aluminum foil to a rimmed baking pan and spray with non-stick cooking spray.
  • In a bowl, combine all ingredients and mix well.
  • Place vegetables on baking pan in one layer.
  • Roast for about 30 minutes or until all vegetables are tender.
