Apples and Michigan go quite hand in hand. As long as I can remember my family and I visited the apple orchard and my absolute favorite part was hand picking apples from the trees. And now as our kids are getting older I plan to continue the tradition. This recipe was closed adapted by this recipe that I sampled on my Michigan Apples blogging trip last fall. These Apple and Oat Breakfast Bars I made last week were also inspired by Michigan apples.
As you likely know my favorite method of cooking vegetables these days is to roast them and adding some simple seasoning to them. However, this recipe takes roasting to an entirely different level with the sweetness from the apples and savory taste of the balsamic vinegar.
Apples are budget-friendly, easy to eat and very nutritious. An easy sell when it comes to taste and nutrition. A medium apple has about 95 calories and 4 grams of fiber. Apples are also a good source of vitamin C (immune boosting vitamin).
