Ingredients

chicken sausage
pre-cooked, cut into 1-inch slices

red skin potatoes
1 inch cubes
1
large onion
roughly chopped
1
green pepper
chopped
1
red pepper
chopped
2
tablespoons
olive oil
1
teaspoon
dried parsley
1
teaspoon
garlic powder
salt and pepper to taste
non-stick cooking spray or olive oil spray
Instructions
Preheat oven to 375 F.
Cover a shallow cookie sheet or jelly roll pan with aluminum foil and spray with non-stick cooking spray or olive oil spray.
In a large bowl stir together the chicken sausage, vegetables, spices and two tablespoons of olive oil.
Add chicken and vegetables to pan.
Cook for 25-35 minutes or until potatoes are tender.
