Simple Roasted Chicken Sausage with Vegetables

This Roasted Chicken Sausage with Vegetables meal is a must-try that takes 35 minutes total. And is one of the simplest recipes to make!

A common theme to this blog (besides healthy recipes with moderation in mind) is simple meals that the whole family will enjoy.

When I saw my friend Katie’s post for this One-Pan Roasted Sausage and Potatoes recipe I knew I had to try it, and SOON.  

Since her post, I have made this recipe several times and changed it a little every time.  

Ingredients Needed for This Chicken Sausage with Vegetables Recipes (full recipe below)

  • chicken sausage
  • red skin potatoes 
  • onion
  • green pepper
  • red pepper
  • olive oil
  • dried parsley
  • garlic powder
  • salt and pepper

It’s so versatile that you can add different vegetables and spices to fit your tastes.

Just make sure to chop the vegetables all about the same size so they will all roast equally.

My entire family enjoys it too, which of course is a HUGE bonus. Okay, maybe my one-year-old picks out only the chicken sausage to eat, but that still is a win in my book!

Now, it’s easier said than done to eat meals as a family, especially with busy lives while juggling work schedules and after-school extracurricular activities.  

If you find it difficult to line up schedules for family dinner time, try eating breakfast together instead.

One of the important parts of family mealtime is the interaction and communication family members have with one another.

And if you’re the cook of the family, you’ll have more time to socialize with your family if you cook meals that take little prep work like this Roasted Chicken Sausage recipe.

Simple Roasted Chicken Sausage with Vegetables

A simple vegetable and protein packed dinner that’s kid-approved!
Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients
  

  • 6 chicken sausage pre-cooked, cut into 1-inch slices
  • 4 red skin potatoes 1 inch cubes
  • 1 large onion roughly chopped
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • non-stick cooking spray or olive oil spray

Instructions
 

  • Preheat oven to 375 F.
  • Cover a shallow cookie sheet or jelly roll pan with aluminum foil and spray with non-stick cooking spray or olive oil spray.
  • In a large bowl stir together the chicken sausage, vegetables, spices and two tablespoons of olive oil.
  • Add chicken and vegetables to pan.
  • Cook for 25-35 minutes or until potatoes are tender.
