Dijon Tuna Cakes with a Creamy Dill Sauce

Ingredients
  

Tuna Cakes

  • 3 5 oz cans Bumble BeeĀ® Solid White Albacore Tuna in Water
  • 1/4 cup whole wheat panko crumbs
  • 1/4 cup red peppers diced
  • 1/4 cup green onions chopped
  • 1 egg
  • 1/2 cup lite mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup fresh parsley chopped
  • salt and pepper to taste
  • 1 tablespoon olive oil

Dill Sauce

  • 1/2 cup lite mayonnaise
  • 1 tablespoon sweet relish
  • 1 teaspoon onion flakes
  • 2 teaspoon lemon juice
  • 1/4 teaspoon dried dill weed
  • pinch salt and pepper

Instructions
 

  • Drain water from tuna then combine all tuna cake ingredients into a bowl. Stir until well combined.
  • Heat 1 tablespoon of oil in a large skillet.
  • Form patties with the tuna mixture and add to warm skillet.
  • Cook for about 5-10 minutes on each side or until they have a crispy texture.
  • In a small bowl, combine all the sauce ingredients and refrigerate until ready to serve.
