Dijon Tuna Cakes

When I came up with this recipe idea I was a little skeptical about whether my three kids would enjoy it.

It’s hit or miss when it comes to new foods that don’t even look familiar. But to my surprise, they LOVED them (including my husband)!  I will definitely be doubling the recipe next time.

I also made a creamy dill sauce to compliment the tuna cakes which was a perfect combo.

The best part was that my husband loves it (the honest critic)! And he asked for the same sauce the following night when we had fish.  I think I found a winner!

When making these tuna cakes I opted to slightly “fry” them in olive oil on a skillet. However, I only needed to use about one tablespoon of olive oil.

So not only did that give it a crispy texture, but we also gained some nutritional benefits from the monounsaturated fats in the olive oil.

If you’d prefer to bake them, I would put them on a baking pan and cook them for about 20 minutes at 400 F(flipping them once).

Dietitian’s Dish

Seafood is an awesome nutritional source that I don’t believe gets enough attention. It’s especially beneficial for pregnant women who need adequate amounts of protein and nutrients.

I know quite a few people are not fully comfortable cooking fish at home (myself included although I’m working on it). So making dishes with Bumble Bee® Solid White Albacore Tuna in water is an excellent substitution.

Not that I’m trying to persuade you from cooking fish, because it’s worth it, but you can also get some pretty awesome nutritional benefits from canned tuna.  And not only is it nutritious, but it’s also very reasonably priced!

You may have guessed that Bumble Bee® Solid White Albacore Tuna in water is an excellent source of protein, but did you know it’s also a good source of Vitamins B6 and B10 and high in Selenium and Niacin?

And it has no saturated fat.

I would say that’s one nutritionally power-packed food!
