Roasted Carrots with Fresh Herbs

carrots
peeled and sliced
olive oil spray
1/4
cup
fresh parsley
chopped
1
tablespoon
fresh rosemary
chopped
1
tablespoon
fresh thyme leaves
salt and pepper
Instructions
Preheat oven to 400°F.
Line a baking sheet with aluminum foil and spray or coat with olive oil.
Add carrots in a single layer to the baking sheet. Spray carrots with olive oil and sprinkle with parsley, rosemary, thyme, salt and pepper
Cook for 25-30 minutes or until crisp-tender, flipping half way through.
