Roasted Carrots with Fresh Herbs

These roasted carrots are such a simple way to add more nutritious and lower-calorie food to your holiday season.

Christmas is THIS week! It always seems to sneak up on me and I’m sure I’m not alone.

And we also have three December birthdays in our family before Christmas arrives (my youngest son E, my mother-in-law and my own).

Quite a busy time of year to say the least!

That’s one reason I like to cook simple recipes like these roasted carrots. I had leftover fresh herbs from my Thanksgiving turkey and thought they would be perfect to add to these carrots.

And don’t worry if you don’t have fresh herbs, you can easily use dried instead. The basic substitution is 1 tablespoon of fresh herbs equals about 1 teaspoon dried herbs (a ratio of 1 to 3).

Carrots are an excellent source of vitamin A (plays a role in immunity and eye health) and a good source of vitamin C (helps heal wounds).

They are also very low in calories with one medium carrot having only 25 calories. Talk about a healthy snack or side dish!

We eat carrots like crazy in our house whether they are raw, roasted or added to casserole dishes.

My kids’ favorite way to eat them is definitely raw carrots dipped in hummus.

Roasted Vegetables with Apples

Roasted Carrots with Fresh Herbs

Crisp-tender carrots sprinkled with fresh herbs.
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients
  

  • 4-5 carrots peeled and sliced
  • olive oil spray
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme leaves
  • salt and pepper

Instructions
 

  • Preheat oven to 400°F.
  • Line a baking sheet with aluminum foil and spray or coat with olive oil.
  • Add carrots in a single layer to the baking sheet. Spray carrots with olive oil and sprinkle with parsley, rosemary, thyme, salt and pepper
  • Cook for 25-30 minutes or until crisp-tender, flipping half way through.
