white granulated sugar

light brown sugar

all-purpose flour

white whole wheat flour

baking powder

baking soda

teaspoon
cinnamon

nutmeg
Toppings:
1/4
cup
butter, melted
1/2
cup
white granulated sugar
2
teaspoons
cinnamon
Instructions
Preheat oven to 350°F. Spray a mini muffin tin with non-stick cooking spray or grease with butter.
In a mixer, combine apple cider, vanilla and egg. Beat until well combined.
Add remaining ingredients (except toppings). Stir until just combined.
Add mixture to mini muffin pan.
Bake for 15-18 minutes or until golden brown.
For the topping: add melted butter to one bowl and the 1/2 cup of sugar and 2 teaspoons of cinnamon to another bowl.
Once muffins are baked, but still warm, dip each muffin into the melted butter, then into the sugar/cinnamon mixture.
