Apple Cider Donut Mini Muffins (made with whole wheat flour!)

These Apple Cider Donut Mini Muffins are amazingly close to apple cider donuts and a MUST try for this fall season!

I recently discovered that apple cider donuts are NOT sold everywhere in the United States. Now that is a BUMMER. I feel sorry for you.

Apple cider donuts are one of the top things we look forward to in Michigan when fall rolls around.

They are amazingly delicious and indulgent. Thank goodness we can’t get them year around.

My waistline would not appreciate it. I’ve been seeing Rachel’s apple cider donut muffins from Baked by Rachel on Pinterest for several weeks now which lead me to make these muffins.

Now my husband may like apple cider donuts even more than I do. But I have to say that when he tasted these muffins he said they were an amazing alternative (and good REPLACEMENT) of actual cider mill donuts.

Not that says a lot about the taste of these muffins and describes just how irresistible they are!

And my younger two kids had no problem helping me dip the muffins into the cinnamon/sugar mix!

Dietitian’s Dish

I’m not going to say these are the perfect healthy snack because they are not. However, I do want to point out that when you’re making recipes that call for all-purpose flour, try swapping out some of it with “white whole wheat flour.”

White whole wheat flour is whole wheat it’s just made with a “white whole grain” and is lighter in texture than whole wheat flour. I typically do about a 50/50 (all-purpose/white whole wheat) split when making baked goods.

It’s an easy way to add some whole grains to your baked goods and even some fiber. Give it a try, you’ll likely not even notice the difference! 

Tips for Making These Apple Cider Mini Muffins

  • Be sure to grease the mini muffin pan with either non-stick spray or butter.
  • You can use any combination of all-purpose flour and white whole wheat flour you’d like. Just use what you have on-hand.
  • Don’t over mix the batter.
  • Add the sugar/butter combo as a topping – it’s worth it!

Apple Cider Donut Mini Muffins

Cook Time 15 minutes
Total Time 30 minutes
Servings 12 muffins

Ingredients
  

  • 3/4 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup white granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Toppings:

  • 1/4 cup butter, melted
  • 1/2 cup white granulated sugar
  • 2 teaspoons cinnamon

Instructions
 

  • Preheat oven to 350°F. Spray a mini muffin tin with non-stick cooking spray or grease with butter.
  • In a mixer, combine apple cider, vanilla and egg. Beat until well combined.
  • Add remaining ingredients (except toppings). Stir until just combined.
  • Add mixture to mini muffin pan.
  • Bake for 15-18 minutes or until golden brown.
  • For the topping: add melted butter to one bowl and the 1/2 cup of sugar and 2 teaspoons of cinnamon to another bowl.
  • Once muffins are baked, but still warm, dip each muffin into the melted butter, then into the sugar/cinnamon mixture.
