Simple and Healthy Baked Oatmeal With Berries

Ingredients
  

  • 2 cups old fashioned oats
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups milk any type you prefer, I used skim milk
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/3 cup maple syrup
  • 2 cups mix of frozen or fresh berries (strawberries, blueberries, blackberries), extra for toppings if desired no need to thaw frozen berries
  • Optional: top with chopped pecans or walnuts

Instructions
 

  • Preheat oven to 375F. Spray a 1 1/2 - 2 quart casserole dish (or 8 x 8-inch pan) with non-stick cooking spray.
  • In a medium-size bowl, combine the oats, baking powder, cinnamon and salt.
  • Add the milk, maple syrup, eggs and vanilla and stir well.
  • Stir in the berries.
  • Pour the mixture into thr casserole dish and bake for 40-45 minutes or until the oatmeal is set and is golden brown.
