Simple and Healthy Baked Oatmeal With Berries

Ingredients

cups
old fashioned oats
1 1/2
teaspoons
baking powder
1 1/2
teaspoon
cinnamon
1/2
teaspoon
salt
2
cups
milk
any type you prefer, I used skim milk
1
teaspoon
vanilla extract
2
eggs
1/3
cup
maple syrup
2
cups
mix of frozen or fresh berries (strawberries, blueberries, blackberries), extra for toppings if desired
no need to thaw frozen berries
Optional: top with chopped pecans or walnuts
Instructions
Preheat oven to 375F. Spray a 1 1/2 - 2 quart casserole dish (or 8 x 8-inch pan) with non-stick cooking spray.
In a medium-size bowl, combine the oats, baking powder, cinnamon and salt.
Add the milk, maple syrup, eggs and vanilla and stir well.
Stir in the berries.
Pour the mixture into thr casserole dish and bake for 40-45 minutes or until the oatmeal is set and is golden brown.
