taco seasoning
salt and black pepper to taste

tilapia
Salsa
1
medium tomato, chopped
1
tablespoon
lime juice
1/4
cup
scallions
1
tablespoon
red wine vinegar
1
can
sweet corn, canned
1
can
black beans, drained and rinsed
1
tablespoon
dried cilantro
1
tablespoon
olive oil
Instructions
Rub each side of tilapia with taco seasoning.
In a large skillet, heat olive oil over medium heat.
Add tilapia to skillet and heat each side for about 4 minutes or until cooked thoroughly.
To make salsa
Combine all salsa ingredients.
Top tilapia with salsa. Serve immediately.
