Tex-Mex Tilapia with Salsa

Ingredients
  

Tilapia

  • 1 tablespoon taco seasoning
  • salt and black pepper to taste
  • 1 pound tilapia

Salsa

  • 1 medium tomato, chopped
  • 1 tablespoon lime juice
  • 1/4 cup scallions
  • 1 tablespoon red wine vinegar
  • 1 can sweet corn, canned
  • 1 can black beans, drained and rinsed
  • 1 tablespoon dried cilantro
  • 1 tablespoon olive oil

Instructions
 

  • Rub each side of tilapia with taco seasoning.
  • In a large skillet, heat olive oil over medium heat.
  • Add tilapia to skillet and heat each side for about 4 minutes or until cooked thoroughly.

To make salsa

  • Combine all salsa ingredients.
  • Top tilapia with salsa. Serve immediately.
