Tex-Mex Tilapia

This Tex-Mex Tilapia is a great way to enjoy Mexican flavors while enjoying fish and is very simple to make!

This was one of the simplest recipes I’ve made in some time. It takes only 4 ingredients for the tilapia, if you’re counting salt and black pepper.

That’s my kind of recipe. I have also included an easy salsa recipe along with it, however, you can easily substitute that for store-bought salsa.

Purchasing Fish

If you’re like me, you may be hesitant as to which type of fish to purchase. I was a bit hesitant for quite a while until I decided the worst that could happen is the recipe doesn’t turn out.

For this Tex-Mex Tilapia, I used frozen tilapia filets from my local grocery store. The frozen section is the only place I purchase fish for a few reasons:

  • You don’t have to worry about cooking the fish right away – since fresh fish should be cooked within 2 days of purchasing
  • Frozen fish is typically cheaper
  • You won’t have the chance of having a fishy smell fill your kitchen

I also used my homemade taco seasoning that I always have on hand.

I started making this seasoning years ago and have continued to this day. It contains no added salt and is just as tasty as the pre-packaged kind.

So if you’d like to lower your sodium levels, try making it yourself – it’s really simple!

Dietitian’s Dish

You will notice that most of my recipes call for “salt to taste” like this tilapia recipe.

That’s because I leave it up to you.

Some individuals don’t want any salt added while others want to add some. I typically add enough other spices that I don’t need the flavor of salt.

However, depending on the recipe I will sometimes add a sprinkle of salt.

And when I discuss using salt, I actually don’t even use 100% salt. I use this Morton’s Salt Lite.

It’s a great substitute for “salt” and adds just the right amount of flavor!

Tex-Mex Tilapia with Salsa

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 4

Ingredients
  

Tilapia

  • 1 tablespoon taco seasoning
  • salt and black pepper to taste
  • 1 pound tilapia

Salsa

  • 1 medium tomato, chopped
  • 1 tablespoon lime juice
  • 1/4 cup scallions
  • 1 tablespoon red wine vinegar
  • 1 can sweet corn, canned
  • 1 can black beans, drained and rinsed
  • 1 tablespoon dried cilantro
  • 1 tablespoon olive oil

Instructions
 

  • Rub each side of tilapia with taco seasoning.
  • In a large skillet, heat olive oil over medium heat.
  • Add tilapia to skillet and heat each side for about 4 minutes or until cooked thoroughly.

To make salsa

  • Combine all salsa ingredients.
  • Top tilapia with salsa. Serve immediately.
