These Simple Baked Panko Crusted Chicken Legs are the perfect weekday meal that takes little prep. And you only need 40 minutes to get this kid-friendly meal on the table!

I don’t know about you but I absolutely love when I make a meal and the ENTIRE family eats it.

This is typically a rare occasion since our youngest often doesn’t eat the main entree that I serve.

Although this does not mean that I make something else for him, it just means he eats a lot more fruit and veggies with hummus.

As a dietitian, I’m just fine with that. I’m sure he will eventually come around to enjoying more main dishes that I make. 

Ingredients Needed to Make these Panko Crusted Chicken Legs

  • chicken legs
  • whole wheat Panko crumbs
  • eggs
  • Italian Seasoning
  • Parmesan cheeese
  • black pepper and salt

You can’t go wrong with a recipe that contains only four ingredients plus spices.

Neighborhood kids! We have the best neighbors with kids similar age to our kids and they play so nicely together.

Since the weather warmed up finally they are constantly playing outside in our backyards and on the lake.

It’s especially fantastic when you can make an entire meal, like these chicken legs, with NO interruptions.

It doesn’t hurt that one of our good friends just recently purchased a large playset which all the kids are obsessed with.

These chicken legs are quite simple to make and can also be made on the grill.

I paired them with a salad kit (my new favorite find at the grocery store), and corn on the cob (frozen) for the kids.

I also turned this into a few meals since I had extra salad leftover so I cut off some chicken and added it to a salad for lunch the next day.

It’s definitely a good day when you make a two-in-one meal!

Simple Baked Panko Crusted Chicken Legs

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 5

Ingredients
  

  • 3 pounds chicken legs about 12 legs
  • 2 cups whole wheat Panko crumbs
  • 2 eggs
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheeese
  • black pepper and salt to taste

Instructions
 

  • Preheat oven to 425°F. Coat a rimmed baking pan with aluminum foil and spray with non-stick cooking spray or olive oil.
  • Beat eggs in a bowl then place on a plate.
  • On another plate combine bread crumbs, Parmesan cheese and seasonings.
  • Dip each chicken leg into beaten eggs, then into bread crumb mixture. Coat well.
  • Place chicken legs on baking pan.
  • Bake for 30 minutes or until chicken is fully cooked.
