Blueberry Oatmeal Bars With Crumble Topping

These Blueberry Oatmeal Bars are the perfect treat packed full of blueberries and delicious oatmeal crumble.

My family went camping on the western side of Michigan at P.J. Hoffmaster State Park over the summer. It was our first time at this park and we loved it.

It had huge sand dunes and a gorgeous beach overlooking Lake Michigan. And with six other families from our neighborhood camping along with us, you can imagine there were tons of kids for our kids to play with.

During our trip, we stayed quite busy hanging out at the beach and kids exploring the plethora of hills and forest. We also discovered an awesome restaurant/bar named The Deck in Muskegon.

And they even allowed dogs. Our 13-year-old golden, Bailey, loved it too.

I also took a 47-mile bike ride from our campground to keep up with my training for my half ironman which I raced last month! It was a wonderful ride with a great bike path and even better roads to traverse. I plan to write up a post about my race, which will hopefully be up sooner than later.

My only regret with my bike ride was I didn’t stop to take any pictures! However, I’m not surprised since I was focused on completing my longest bike ride in years.

Our First Blueberry Picking Experience!

In addition to all the activities I’ve mentioned so far, some of our friends informed us of a cool place to pick blueberries called Lindberg’s Blueberries. Rightfully named, this small farm is located in Fruitport, Michigan.

For $11 you get a white bucket with a plastic bag insert to fill. They also offered a rope to tie around your waist to hold the bucket for easy picking. This made it super easy for the kids to pick. And they all insisted on having a turn holding the bucket.

It was fantastic timing too since my oldest son asked for a ton of blueberries as a birthday present. His birthday was less than a week away, so that couldn’t have worked out better.

We have previously gone apple picking plenty of times as well as strawberry picking, however, this was the first time we went blueberry picking.

And boy can I say it won’t be our last! It was a blast! And the best part was that it wasn’t commercialized like many of the farms in the metro Detroit area. We can’t wait to go back!

We ended up with at least 20 pounds of blueberries! I’m a bit surprised we didn’t finish them all before I had a chance to make something with them.

Thankfully we had about 4 cups remaining so I could make this delicious Blueberry Oatmeal Bars recipe. My husband couldn’t get over how amazing it was and said it was just like blueberry pie.

Blueberry Oatmeal Bars

A perfect treat packed full of blueberries and delicious oatmeal crumble.

Equipment

  • 8 x 8 in. baking pan

Ingredients
  

Crust and Crumble Topping

  • 1 cup all-purpose flour
  • 1 cup old fashioned oats
  • 3/4 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 5 tablespoons butter, melted
  • 1 large egg yolk, discard egg white

Blueberry Filling

  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions
 

  • Preheat oven to 350 F. Line an 8 x 8-inch pan with parchment paper.
  • In a medium bowl, whisk together flour, oats, brown sugar, cinnamon and salt.
  • Stir in melted butter and egg yolk. Continue stirring until it becomes a crumble mixture.
  • Reserve 1 cup of the crumble mixture and set aside. Add the remaining mixture to the baking pan, packing it down into the pan.
  • In a medium bowl, combine the blueberry mixture ingredients until the blueberries are well coated.
  • Pour blueberry mixture on top of the crumble base, then sprinkle the remaining 1 cup of oatmeal crumble on top.
  • Bake for 45-50 minutes or until blueberries are bubbling and crumble is golden brown.
  • Cool completely before serving.
