Cheesy Egg & Beef Breakfast Muffins

These Cheesy Egg & Beef Breakfast Muffins are an excellent way to start your morning off on the right foot. They are an excellent make-ahead breakfast and the best part is they take just minutes to reheat!

Ever have one of those days, weeks or months when you feel like you’re on a roller coaster that doesn’t have an end in sight?

Well that’s been me the last month.

I’ll spare you with the details for now, but I sure could use a week-long nap!

Anyways, since returning from my Blog Brûlée trip a few days ago, I have yet to get settled.

Thankfully I had the chance to go grocery shopping and get some staples in the house. However, I haven’t had much of a chance for meal planning.

So I decided to throw together a few meals at a time using a few of my favorite proteins–eggs and beef!

Egg muffins have been growing in popularity quite a bit over the past few years. So I thought I’d share my favorite way to make them.

Part of this recipe is actually split into two meals. I used half the beef, onion and peppers in this recipe and the other half in another Chocolate Slopes recipe. These simple and delicious Cheesy Beef Roll Ups

If you’d rather use all the beef, onion and peppers mixture just make sure to add enough eggs. You’ll need about 16 eggs instead of 8.

My favorite part about this recipe is that it’s simple to warm up in the microwave. And it provides an easy high protein meal in minutes. 

Dietitian’s Dish

Each one of these breakfast muffins contains 15 grams of protein. Eating two of these muffins in the morning gives you about 30 grams of protein making it an excellent protein meal.

Protein not only helps keep you satisfied longer but also helps keep your muscles strong. And that’s important at any age!

Egg & Beef Breakfast Muffins

A delicious high protein breakfast meal ready in minutes!
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 large onion finely chopped
  • 1/2 yellow pepper finely chopped
  • 1 Guindilla Verde pepper finely chopped
  • 1/2 pound extra lean ground beef
  • 1 teaspoons no-salt all purpose seasoning
  • 1 teaspoon garlic powder
  • 8 large eggs
  • 1/4 cup skim milk
  • 1 cup 2% sharp cheddar cheese divided

Instructions
 

  • Preheat oven to 350°F.
  • Spray a muffin tin with non-stick cooking spray.
  • In a large skillet add oil, onions and peppers. Saute until tender.
  • Add ground beef and cook until beef is browned.
  • In a large bowl combine eggs, milk, 1/2 cup cheese and seasonings. Beat well.
  • Once beef is cooked, add to egg mixture.
  • Place beef and egg mixture into each muffin cup (about 1/2 cup each). Sprinkle remaining 1/2 cup cheese evenly on top of each muffin.
  • Bake for 25 minutes or until eggs are set and cooked thoroughly.
