Ingredients

olive oil

large onion
finely chopped
1/2
yellow pepper
finely chopped

Guindilla Verde pepper
finely chopped

extra lean ground beef
1
teaspoons
no-salt all purpose seasoning
1
teaspoon
garlic powder
8
large eggs
1/4
cup
skim milk
1
cup
2% sharp cheddar cheese
divided
Instructions
Preheat oven to 350°F.
Spray a muffin tin with non-stick cooking spray.
In a large skillet add oil, onions and peppers. Saute until tender.
Add ground beef and cook until beef is browned.
In a large bowl combine eggs, milk, 1/2 cup cheese and seasonings. Beat well.
Once beef is cooked, add to egg mixture.
Place beef and egg mixture into each muffin cup (about 1/2 cup each). Sprinkle remaining 1/2 cup cheese evenly on top of each muffin.
Bake for 25 minutes or until eggs are set and cooked thoroughly.
