I am typically a cereal-type of breakfast eater, except on the weekends.

On weekends when we’re not rushing out of the house for an activity, my family loves to eat scrambled cheese eggs.

Typically I add any vegetables we have that are leftover from the week. However, this time I added a bit more than just veggies!

As you can tell I love cooking with lean ground beef. It’s so simple to cook and is a fantastic protein source for the entire family.

I simply sautéed onions and peppers and added ground beef.

Once cooked, I removed the beef and veggie combo and added eggs, cheese and spinach to the pan.

After the eggs were cooked I added it all to whole wheat tortillas. That’s it!

Eating ground beef for breakfast may not be the norm, but it’s definitely something to try!

Feel free to change up the seasonings to your preference.

You can easily swap the cheddar cheese with your favorite type of cheese.

Not only is this meal high in protein, but also high in fiber when you add veggies and whole wheat tortillas.

A serving (3 ounces) of lean ground beef contains about 22 grams of protein.

This is a fantastic start to the day since protein helps to keep you satisfied longer than just eating grains.

So, you’ll be less likely to want to snack soon after you’ve eaten breakfast.

Beef & Spinach Breakfast Burritos

A protein-packed cheesy egg and beef burrito!

Ingredients
  

  • 1 pound lean ground beef
  • 1/2 large onion chopped
  • 1 red pepper chopped
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sage
  • salt and pepper to taste
  • 8 eggs
  • 1/4 cup skim milk
  • 1 cup loose spinach leaves
  • 1 cup sharp cheddar cheese shredded
  • 4 whole wheat tortillas
  • maple syrup optional

Instructions
 

  • Heat olive oil in a medium skillet, add onions and pepper. Add ground beef until beef is no longer pink.
  • Remove beef from skillet.
  • Combine eggs and milk in a bowl. Whisk until combined.
  • Add eggs and seasonings to skillet, cook until scrambled then add cheese.
  • Lay out each tortilla, top with about 1/4 cup eggs and 1/4 cup ground beef mixture. Wrap each tortilla and drizzle with maple syrup.
