Ingredients

lean ground beef
1/2
large onion
chopped

red pepper
chopped
1
tablespoon
olive oil

teaspoons
minced garlic

teaspoon
Italian seasoning
1
teaspoon
sage
salt and pepper to taste

eggs
1/4
cup
skim milk
1
cup
loose spinach leaves
1
cup
sharp cheddar cheese
shredded
4
whole wheat tortillas
maple syrup
optional
Instructions
Heat olive oil in a medium skillet, add onions and pepper. Add ground beef until beef is no longer pink.
Remove beef from skillet.
Combine eggs and milk in a bowl. Whisk until combined.
Add eggs and seasonings to skillet, cook until scrambled then add cheese.
Lay out each tortilla, top with about 1/4 cup eggs and 1/4 cup ground beef mixture. Wrap each tortilla and drizzle with maple syrup.
