Beef & Spinach Breakfast Burritos

A protein-packed cheesy egg and beef burrito!

Ingredients
  

  • 1 pound lean ground beef
  • 1/2 large onion chopped
  • 1 red pepper chopped
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sage
  • salt and pepper to taste
  • 8 eggs
  • 1/4 cup skim milk
  • 1 cup loose spinach leaves
  • 1 cup sharp cheddar cheese shredded
  • 4 whole wheat tortillas
  • maple syrup optional

Instructions
 

  • Heat olive oil in a medium skillet, add onions and pepper. Add ground beef until beef is no longer pink.
  • Remove beef from skillet.
  • Combine eggs and milk in a bowl. Whisk until combined.
  • Add eggs and seasonings to skillet, cook until scrambled then add cheese.
  • Lay out each tortilla, top with about 1/4 cup eggs and 1/4 cup ground beef mixture. Wrap each tortilla and drizzle with maple syrup.
