1pound Farfalle pasta
1tablespoon olive oil
2teaspoonsminced garlic
1medium onion, chopped
1cupasparagus, chopped
1cupcanned artichokes, quartered
1(6.3 ounce) jarbasil pesto
Instructions
Preheat oven to 375ºF.
Add pork loin to a shallow pan and cook according to directions (mine took about 40 minutes for a 1.5 pound loin). Cut pork loin into slices or small pieces.
Cook pasta as directed.
While pasta is cooking add olive oil, minced garlic, onions and asparagus to a large skillet. Cook over medium heat until vegetables are tender.
Stir in artichoke hearts, pesto and cooked pork loin.
Notes
Feel free to cook the Smithfield pork loin on the grill which is quite simple and takes less time to cook.
