Chocolate Zucchini Cake

Ingredients
  

  • 1 1/2 cup butter, softened
  • 1/3 cup unsweetened applesauce
  • 2 tablespoons canola oil
  • 1 3/4 cups Imperial Sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup skim milk
  • 1 1/2 teaspoons white vinegar
  • 2 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups finely grated zucchini

Instructions
 

  • Preheat oven to 350°F and coat two loaf pans with non-stick cooking spray.
  • Mix the butter, oil, applesauce and sugar. Add the eggs and vanilla.
  • Combine the milk and vinegar.
  • In another bowl stir together the flour, cocoa, baking soda, baking powder and salt.
  • Slowly add the milk mix and dry ingredients, alternatively to the sugar mixture. Mix well.
  • Stir in zucchini by hand and pour into two loaf pans.
  • Combine chocolate chips, walnuts and brown sugar and sprinkle over both mixtures.
  • Bake for 40-45 minutes or until toothpick comes out of loaves clean.
