Separate dough into two equal parts, coloring one with green food coloring and the another with red food coloring.
Roll each dough out to about 1/4 inch think and place each on cookie sheets lined with wax paper, then cover each with wax paper.
Refrigerate for at least 2 hours.
Remove from refrigerator and place dough sheets on top of one another and place on a cutting board.
Press edges together and cut edges of dough to form a rectangle.
Begin rolling dough slowly to form a jelly-roll loaf.
Pour Christmas sprinkles on a large plate.
Roll loaf gently over sprinkles until well coated.
Slice cookie loaf into 1/4 inch thick cookies.
Bake on cookie sheet lined with parchment paper for 8-10 minutes (don't over-bake, the cookies may not look done).
