Healthy Zucchini Bread
A healthy version of zucchini bread with flavored with maple syrup and pineapple!

- 2 eggs
- 1/4 cup canola oil
- 1/4 cup maple syrup
- 1 cup crushed pineapple drained
- 1/4 cup pineapple juice from crushed pineapple
- 1/2 cup non-fat plain yogurt
- 1/2 cup granulated sugar
- 1 cup white whole wheat flour
- 1 1/2 cups all purpose flour
- 1 tablespoon cinnamon
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups grated zucchini
- 1/2 cup walnuts chopped (optional)
Preheat oven to 350°F. Coat a loaf pan with non-stick cooking spray.
In a large bowl combine eggs, canola oil, maple syrup, pineapple, pineapple juice, yogurt and sugar. Mix well.
In another large bowl combine flour, cinnamon, baking soda, baking powder and salt.
Add flour mixture to liquid ingredients and mix until combined.
Fold in zucchini and walnuts just until combined.
Place in loaf pan and bake four about 1 hour or until toothpick comes out of loaf clean.
