Maple Pecan Granola

A simple, healthy and sweet breakfast or can be sprinkled over ice cream!

Ingredients
  

  • 3 cups old fashioned oats
  • 1/2 cup ground flaxseed
  • 1/2 cup pecans chopped
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • salt to taste
  • 1/4 cup canola oil
  • 1/4 cup maple syrup

Instructions
 

  • Preheat oven to 300°F. Line a cookie sheet with parchment paper or spray it with non-stick cooking spray (a rimmed baking sheet works best).
  • Combine all dry ingredients in a large bowl.
  • Add maple syrup and canola oil to bowl and stir until oats are well coated.
  • Add granola to pan and cook for 15 minutes, stir, then cook for another 10-15 minutes or until oats are light-brown in color. Don’t overcook!
