Maple Pecan Granola
A simple, healthy and sweet breakfast or can be sprinkled over ice cream!
- 3 cups old fashioned oats
- 1/2 cup ground flaxseed
- 1/2 cup pecans chopped
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- salt to taste
- 1/4 cup canola oil
- 1/4 cup maple syrup
Preheat oven to 300°F. Line a cookie sheet with parchment paper or spray it with non-stick cooking spray (a rimmed baking sheet works best).
Combine all dry ingredients in a large bowl.
Add maple syrup and canola oil to bowl and stir until oats are well coated.
Add granola to pan and cook for 15 minutes, stir, then cook for another 10-15 minutes or until oats are light-brown in color. Don’t overcook!
