Preheat oven to 350°F. Spray a 13 x 9 x 2 inch baking pan with non-stick cooking spray.
Heat olive oil in a large skillet over medium heat.
Add onions, celery, and all seasonings. Cook until vegetables are tenders (about 10 minutes).
While vegetables are cooking, cook bacon according to package directions.
Once vegetables are tender, add chicken broth and bring to a boil.
Remove the vegetables from the heat.
In a medium-sized bowl, add bread stuffing and stir slowly, coating bread with chicken broth.
Gently stir in 1 cup of the cheese.
Add stuffing to baking dish and sprinkle remaining 1 cup of cheese over the top of the stuffing.
Cover dish with aluminum foil and bake for 1 hour.
