Freekeh Spinach Salad {with lemon honey vinaigrette dressing}

A nutritious high protein and high fiber salad!

Ingredients
  

  • 1/2 cup freekeh uncooked
  • 4 cups baby spinach
  • 1/2 cup chopped carrots
  • 1 red pepper chopped
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese

Salad Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • salt and pepper to taste

Instructions
 

  • In a medium sauce pan, add freekeh and 2 cups of water. Bring to a boil, then cover and simmer for 20-25 minutes (or until desired texture is reached).
  • Set freekeh aside and let cool.
  • Combine all salad ingredients in a large bowl.
  • Add cooled freekeh to salad.
  • Whisk salad dressing ingredients together until well combined.
  • Add dressing to salad immediately prior to serving.
