Freekeh Spinach Salad {with lemon honey vinaigrette dressing}
A nutritious high protein and high fiber salad!
- 1/2 cup freekeh uncooked
- 4 cups baby spinach
- 1/2 cup chopped carrots
- 1 red pepper chopped
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
Salad Dressing
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- salt and pepper to taste
In a medium sauce pan, add freekeh and 2 cups of water. Bring to a boil, then cover and simmer for 20-25 minutes (or until desired texture is reached).
Set freekeh aside and let cool.
Combine all salad ingredients in a large bowl.
Add cooled freekeh to salad.
Whisk salad dressing ingredients together until well combined.
Add dressing to salad immediately prior to serving.
