Corn Black Bean and Avocado Salad

Ingredients
  

  • 1 cup fresh corn cooked or canned corn
  • 1 red pepper chopped
  • 1/4 cup red onion finely chopped
  • 1 large avocado peeled and chopped
  • 1 15 ounce can black beans
  • 1/4 cup cilantro chopped

Dressing

  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • salt and black pepper to taste

Instructions
 

  • Combine all vegetables and black beans in a large bowl.
  • Combine lime juice, olive oil, garlic, salt and pepper in a small bowl and stir to combine.
  • Drizzle dressing over salad.
  • Refrigerate at least 30 minutes before serving.
