Ingredients

cup
fresh corn cooked
or canned corn
1
red pepper
chopped
1/4
cup
red onion
finely chopped
1
large avocado
peeled and chopped
1
15 ounce can black beans
1/4
cup
cilantro
chopped
Dressing
1
tablespoon
lime juice
2
tablespoons
olive oil
1
teaspoon
minced garlic
salt and black pepper to taste
Instructions
Combine all vegetables and black beans in a large bowl.
Combine lime juice, olive oil, garlic, salt and pepper in a small bowl and stir to combine.
Drizzle dressing over salad.
Refrigerate at least 30 minutes before serving.
