Cinnamon Apple Zucchini Bread

Ingredients
  

  • 1/2 cup canola oil
  • 1/3 cup sour cream
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup brown sugar
  • 1 1/2 cup all-purpose flour
  • 1/2 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup Fuji or Braeburn apple, peeled and diced
  • 1 cup zucchini, shredded

Instructions
 

  • Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with non-stick spray or line pan with parchment paper.
  • In a large bowl, combine oil, sour cream, eggs, vanilla extract and sugar. Mix well.
  • Add flour, baking soda, salt and cinnamon. Stir until well combined.
  • Stir in apple and zucchini and mix well.
  • Bake for 55-60 minutes or until a toothpick comes out clean.
