Southwest Quinoa Salad
A southwest flavor salad full of veggies and whole grain!

Ingredients
1/2
cup
uncooked quinoa
1/2
can black beans
drained and rinsed
1
cup
corn
1
cup
red pepper
finely chopped
1/3
cup
green onions
finely chopped
1/2
cup
fresh cilantro
chopped
Dressing
2
tablespoons
olive oil
1
teaspoon
cumin
1
garlic clove
minced
juice from 1 lime
Instructions
Cook quinoa according to package directions.
Combine black beans, corn, red peppers, green onions and cilantro in a large bowl.
Add cooled quinoa to the vegetable mixture.
Whisk dressing ingredients together in a small bowl then pour over vegetable quinoa mix.
Serve immediately or cooled.
Notes
If you're serving this for a party you may want to double or triple the batch.
