Southwest Quinoa Salad

A southwest flavor salad full of veggies and whole grain!

Ingredients
  

  • 1/2 cup uncooked quinoa
  • 1/2 can black beans drained and rinsed
  • 1 cup corn
  • 1 cup red pepper finely chopped
  • 1/3 cup green onions finely chopped
  • 1/2 cup fresh cilantro chopped

Dressing

  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 garlic clove minced
  • juice from 1 lime

Instructions
 

  • Cook quinoa according to package directions.
  • Combine black beans, corn, red peppers, green onions and cilantro in a large bowl.
  • Add cooled quinoa to the vegetable mixture.
  • Whisk dressing ingredients together in a small bowl then pour over vegetable quinoa mix.
  • Serve immediately or cooled.

Notes

If you're serving this for a party you may want to double or triple the batch.
