Ingredients

whole wheat penne pasta
1
pound
chicken tenderloins
cooked and cut into strips
1
teaspoon
Italian seasoning
black pepper and salt
1
tablespoon
olive oil
1
medium onion
chopped
8
ounce
fresh mushrooms chopped
2
teaspoons
minced garlic
10
ounce
frozen spinach
drained and thawed
2
cups
skim milk
3
tablespoons
all purpose flour
7
ounce
container pesto
1
cup
shredded mozzarella cheese
Instructions
Cook pasta according to directions.
In a large skillet add olive oil, garlic and onions. Saute over medium heat until onions are tender.
Add cooked chicken, mushrooms, spinach, Italian seasoning, black pepper, salt, milk and flour. Stirring constantly until sauce thickens.
Stir in pasta and pesto.
Add pasta to a 2 1/2 quart casserole dish and top with mozzarella cheese.
Bake for 20 minutes.
