Vegetable, Barley and Bean Stew {Vegan}

Ingredients
  

  • 1 medium onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 red pepper chopped
  • 2 tablespoons olive oil
  • 8 cups vegetable broth
  • 2 teaspoons garlic minced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • ½ teaspoon thyme
  • 2 bay leaves
  • ¼ teaspoon black pepper
  • 1 can 15.5 oz northern or black beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • 1 cup pearled barley uncooked
  • 3 cups fresh spinach

Instructions
 

  • In a large soup pot, heat olive oil over medium-high heat.
  • Add vegetables (except spinach) and sauté in oil until tender (about 5-10 minutes).
  • Add remaining ingredients except spinach and simmer for about 1 hour or until barley is soft, stirring occasionally.
  • Last 5 minutes add spinach.

Notes

Don't forget to remove the bay leaves before serving!
