Maple Walnut Oatmeal Muffins

Ingredients
  

  • 1/2 cup skim milk
  • 1/4 cup maple syrup
  • 1/4 cup canola oil
  • 1/2 cup brown sugar
  • 1 cup old fashioned oats
  • 2 large eggs 1
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped

Maple Glaze (optional)

  • 1 cup confectioners sugar
  • 2 tablespoon skim milk 2
  • tablespoons maple syrup

Instructions
 

  • Preheat oven to 400ºF. Add paper muffin cups to muffin pan.
  • In a medium-size bowl, combine milk, maple syrup, canola oil, brown sugar, oats, eggs and vanilla extract. Mix well.
  • Add the remaining ingredients and mix well.
  • Evenly distribute mixture into 12 paper muffin cups.
  • Bake for 18-22 minutes or until muffins are golden brown.
