Easy Oven Baked Dijon Mustard Honey Salmon

Ingredients
  

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 teaspoons garlic, minced
  • 1 pound salmon fillet I start with four 4-ounce frozen fillets.
  • 2 tablespoons fresh parsley

Instructions
 

  • If salmon is frozen, cover with cold water and place in the refrigerator until thawed.
  • Preheat oven to 400 degrees F and line a rimmed baking pan with aluminum foil sprayed with non-stick cooking spray.
  • In a small bowl, combine soy sauce, olive oil, honey, Dijon mustard and garlic. Stir until well combined.
  • Place thawed salmon fillets onto the prepared baking pan with skin facing down. Spoon about 1/4 cup of the sauce over the top of the salmon.
  • Bake for 15 minutes, then spoon the remaining sauce over top of the salmon and bake for an additional 3-5 minutes or until thouroughly cooked. Internal temperature should reach at least 145 degrees F.
