Saute onions and garlic with 1-2 tablespoons olive oil over medium heat. Cook for about 5 minutes or until onions are translucent. Remove onions from pan and set aside.
Season pork with salt and pepper and place in heated skillet. Cook just until internal temperature of pork reaches 145 degrees (be careful not to overcook).
Add onions, mushrooms and smoked paprika to skillet. Stir in sour cream.
Bring to a simmer for about 5 minutes or until it begins to thicken.
