Easy Skillet Pork Stroganoff

Ingredients
  

  • 1 pound pork tenderloin, cut into cubes
  • 1 large sweet onion, sliced
  • 1-2 tablespoons olive oil
  • 10 ounces mushrooms, sliced
  • 2 teaspoons garlic
  • 1 teaspoon smoked paprika
  • 1 cup sour cream
  • salt and black pepper
  • fresh parsley
  • 3 cup uncooked whole wheat egg noodles

Instructions
 

  • Cook egg noodles according to directions.
  • Saute onions and garlic with 1-2 tablespoons olive oil over medium heat. Cook for about 5 minutes or until onions are translucent. Remove onions from pan and set aside.
  • Season pork with salt and pepper and place in heated skillet. Cook just until internal temperature of pork reaches 145 degrees (be careful not to overcook).
  • Add onions, mushrooms and smoked paprika to skillet. Stir in sour cream.
  • Bring to a simmer for about 5 minutes or until it begins to thicken.
  • Serve with egg noodles and top with parsley.
