Baked Corned Beef and Swiss Hawaiian Sliders

Equipment

  • rimmed baking pan

Ingredients
  

  • 12 Hawaiian Mini Rolls
  • 1 pound lean corned beef, sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut
  • 1 tablespoon olive oil
  • poppy seeds

Thousand Island Dressing

  • 1/4 cup ketchup
  • 1/4 cup light mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Preheat oven to 350°F.
  • Cover a rimmed baking pan with aluminum foil and spray with non-stick cooking spray (or use a silcone mat).
  • Leaving the rolls together, slice them in half.
  • Place the bottom of the rolls onto the baking pan followed by the corned beef, sauerkraut, Thousand Island, Swiss cheese followed by the top of the Hawaiian rolls.
  • Brush on olive oil and sprinkle with poppy seeds.
  • Loosely place aluminum foil (the underside sprayed with non-stick cooking spray) over top of the rolls.
  • Bake for 20 minutes.*

Notes

*I sometimes have issues with the bottoms of the sliders getting too brown so I now place the pan on the oven rack toward the top half of my oven. Or you can decrease the cooking time by 5 minutes.
