Baked Cod with Mango Salsa

Ingredients
  

  • 4 cod filets, frozen or fresh
  • 1 teaspoon paprika
  • salt and black pepper to taste

Mango Salsa

  • 1 mango, peeled and diced
  • 1/4 cup red pepper, diced
  • 1 tablespoon green onions, chopped
  • 1 tablespoon fresh cilantro, minced
  • 1 tablespoon fresh lime juice

Instructions
 

  • Preheat oven to 400 F.
  • Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
  • Place cod on baking sheet and sprinkle with paprika, salt and pepper.
  • Bake for 22-25 minutes or until fish is cooked to 145 F and separates easily with a fork.
  • Combine mango, red pepper, green onions, cilantro and lime juice in bowl. Stir until combined.
  • Just before serving, top each filet with mango salsa.
