1/3 cup butter, softened
3/4 cup brown sugar
1large egg
1medium ripe banana, mashed
1 cupwhite whole wheat flour
1/4cup cocoa powder
1/4cupflaxseed
1 teaspoonbaking powder
1/2 teaspoonbaking soda
3/4teaspoonsalt
1/2cupmini chocolate chipsAdd more if desired, I rarely measure chocolate chips
Instructions
In a small bowl, combine oats and buttermilk. Stir until combined and set aside for about 20 minutes.
Preheat oven to 400 F. Coat 16 muffin tins with non-stick cooking spray.
In a large bowl, beat butter, brown sugar and egg together until well combined. Add banana and beat well.
Stir in oats mixture followed by flour, cocoa, baking powder, baking soda and salt.
Stir in chocolate chips.
Fill muffin tins evenly with mixture (about 2/3 full) and bake for about 16 minutes or until a toothpick comes out clean.
