Oatmeal Cocoa Muffins

Ingredients
  

  • 1 cup quick oats
  • 1 cup buttermilk I rarely have buttermilk on hand so my substitute is 1 T white vinegar poured into a glass measuring cup, then fill remaining with skim milk
  • 1/3 cup butter, softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 medium ripe banana, mashed
  • 1 cup white whole wheat flour
  • 1/4 cup cocoa powder
  • 1/4 cup flaxseed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup mini chocolate chips Add more if desired, I rarely measure chocolate chips

Instructions
 

  • In a small bowl, combine oats and buttermilk. Stir until combined and set aside for about 20 minutes.
  • Preheat oven to 400 F. Coat 16 muffin tins with non-stick cooking spray.
  • In a large bowl, beat butter, brown sugar and egg together until well combined. Add banana and beat well.
  • Stir in oats mixture followed by flour, cocoa, baking powder, baking soda and salt.
  • Stir in chocolate chips.
  • Fill muffin tins evenly with mixture (about 2/3 full) and bake for about 16 minutes or until a toothpick comes out clean.
