Stove Top Lentil Soup

An excellent vegetarian meal full of nutrients and takes only 10 minutes to prep.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 sweet onion, chopped
  • 1 tablespoon garlic, minced
  • 2 celery ribs, chopped (about 1 1/4 cups)
  • 1 large carrots, chopped (about 1 1/4 cups)
  • 2 cups lentils, green or brown, rinsed
  • 1 14 oz. can diced tomatoes
  • 6 cups vegetable or chicken broth, low sodium
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 1/2 teaspoon paprika
  • 2 dried bay leaves
  • 2 tablespoons lemon juice
  • salt and black pepper to taste

Instructions
 

  • Heat oil in a large pot over medium heat. Add garlic and onion to pot and cook for 2 minutes or until slightly softened.
  • Add celery and carrots and cook for 7 - 10 minutes or until softened.
  • Stir in all remaining ingredients except the lemon and salt.
  • Increase heat and bring to a simmer. Place lid on and turn heat down to simmer for 35 - 40 minutes or until lentils are soft.
  • Season to taste with salt and pepper. Add lemon juice just before serving.
