olive oil

sweet onion, chopped

tablespoon
garlic, minced

celery ribs, chopped (about 1 1/4 cups)
1
large carrots, chopped (about 1 1/4 cups)

cups
lentils, green or brown, rinsed
1
14 oz. can
diced tomatoes

vegetable or chicken broth, low sodium
1/2
teaspoon
cumin
1/2
teaspoon
coriander
1 1/2
teaspoon
paprika
2
dried bay leaves
2
tablespoons
lemon juice
salt and black pepper to taste
Instructions
Heat oil in a large pot over medium heat. Add garlic and onion to pot and cook for 2 minutes or until slightly softened.
Add celery and carrots and cook for 7 - 10 minutes or until softened.
Stir in all remaining ingredients except the lemon and salt.
Increase heat and bring to a simmer. Place lid on and turn heat down to simmer for 35 - 40 minutes or until lentils are soft.
Season to taste with salt and pepper. Add lemon juice just before serving.
