30-Minute Stovetop Black Bean Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 4 (15.5 oz) cans black bean, undrained
  • 2 cups low-sodium chicken broth
  • 1 tablespoon dried cumin
  • 1/4 teaspoon dried smoked paprika
  • 8 teaspoons lime juice
  • 2 (16 oz) jars salsa any kind
  • fresh cilantro, avocado, shredded cheese optional

Instructions
 

  • Heat olive oil over medium heat in a medium pot.
  • Add onions and garlic and cook until onions are translucent.
  • Add beans, broth, salsa, lime juice, cumin, smoked paprika, salt and pepper.
  • Carefully use an immersion blender to blend beans mixture to desired consistency.
  • Bring to a boil, then reduce heat to a simmer for about 15-20 minutes. Stir occasionally.
  • Add desired toppings when ready to serve.
