Parsley Spinach Pesto

Ingredients
  

  • 4 cups fresh spinach, roughly chopped
  • 1 cup fresh parsley, chopped
  • 1 tablespoon minced garlic
  • 1/4 cup sunflower seeds
  • 2 scallions
  • 1 tablespoon lemon juice
  • 1/4 cup Parmesan cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon salt

Instructions
 

  • Add all ingredients except the olive oil to a food processor. Blend until well combined.
  • Add the olive oil to the processor while mixing slowly until the pesto is smooth.
  • Refrigerate until ready to serve.
