Smithfield Boneless Fresh Pork Sirloin Roast

water

tablespoon
olive oil
1 1/2
teaspoons
coriander
1
teaspoon
cumin
1
teaspoon
paprika

teaspoons
minced garlic
black pepper and salt to taste

medium red onion
chopped

cup
sliced cherry tomatoes
1/4
cup
roasted red peppers
1/2
cup
black olives
1/2
cup
kalamata olives
1/4
cup
feta cheese
crumbled
1/4
cup
fresh parsley
chopped
Instructions
Add red onions, pork roast and water to slow cooker.
Rub olive oil and all seasonings on top of roast.
Cook on low for 8-10 hours or high for 4-6 hours.
Remove pork roast and slice or shred with two forks. Return pork to slow cooker for about 30 additional minutes.
Remove pork from slow cooker, draining most of liquid, then combine pork, the remaining vegetables and quinoa together and serve in a bowl.
