Slow Cooker Mediterranean Pork Roast Quinoa Bowl

Ingredients
  

  • 2-3 pounds Smithfield Boneless Fresh Pork Sirloin Roast
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons coriander
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 teaspoons minced garlic
  • black pepper and salt to taste
  • 1 medium red onion chopped
  • 1 cup sliced cherry tomatoes
  • 1/4 cup roasted red peppers
  • 1/2 cup black olives
  • 1/2 cup kalamata olives
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Add red onions, pork roast and water to slow cooker.
  • Rub olive oil and all seasonings on top of roast.
  • Cook on low for 8-10 hours or high for 4-6 hours.
  • Remove pork roast and slice or shred with two forks. Return pork to slow cooker for about 30 additional minutes.
  • Remove pork from slow cooker, draining most of liquid, then combine pork, the remaining vegetables and quinoa together and serve in a bowl.
