Ingredients

Eye of Bottom Roast
boneless

red pepper
chopped
1
medium onion
chopped
2
tablespoons
lime juice
2
teaspoons
minced garlic
2
teaspoons
cumin
black pepper and salt to taste

cups
beef broth

4.25 ounce can green chilies
1
13 ounce can corn
Optional: 3 cups Brown rice
Optional toppings: fresh Cilantro
sour cream, green onions, Mexican-style shredded cheese
Instructions
Add onions and red pepper to bottom of slow cooker followed by roast.
Add spices, beef broth and lime juice to slow cooker.
Cook on low for 8-10 hours or high for 6-8 hours.
Add green chilies and corn. Cook for another 30-60 minutes.
Serve with brown rice and garnish with optional toppings.
