Grilled Hawaiian Steak Kabobs

Ingredients
  

  • 1 to 1/2 pounds top sirloin steak cubed
  • 1 red onion chopped
  • 2 zucchini sliced into circles
  • 1 yellow bell pepper chopped
  • 1 16 ounce can pineapple tidbits (save juice)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger

Marinade

  • 1/2 cup pineapple juice from can
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 2 teaspoons minced garlic

Instructions
 

  • Combine marinade ingredients in a bowl. Stir until well combined.
  • Place steak and marinade into a sealed plastic bag.
  • Refrigerate for 1 hour up to 24 hours.
  • Combine vegetables and pineapple in a bowl and drizzle with 2 tablespoons of olive oil, garlic powder and ginger.
  • Soak wooden skewers in water for at least 30 minutes to prevent scorching.
  • Add marinated steak and vegetables to skewers.
  • Grill kabobs on high for about 5 minutes or until cooked to desired doneness.
