Grilled Red Potato Skins

Ingredients
  

  • 5 red potatoes washed and cut into 1/4 inch slices
  • 1/2-3/4 cup shredded Colby Jack cheese
  • 1/2 cup bacon bits
  • 2 green onions chopped
  • olive oil

Instructions
 

  • Microwave potatoes with about 2 tablespoons of water for about 10 minutes until slightly tender.
  • Spray or brush on olive oil on top of each potato slice.
  • Place potato slices directly on the grill or on a grill pan over medium heat.
  • Grill for about 10-15 minutes or until potatoes are tender. Sprinkle with cheese and grill for about 5 more minutes or until cheese is melted.
  • Remove from grill and top with bacon bits and green onions.
