Ingredients
5
red potatoes
washed and cut into 1/4 inch slices
1/2-3/4
cup
shredded Colby Jack cheese
1/2
cup
bacon bits
2
green onions
chopped
olive oil
Instructions
Microwave potatoes with about 2 tablespoons of water for about 10 minutes until slightly tender.
Spray or brush on olive oil on top of each potato slice.
Place potato slices directly on the grill or on a grill pan over medium heat.
Grill for about 10-15 minutes or until potatoes are tender. Sprinkle with cheese and grill for about 5 more minutes or until cheese is melted.
Remove from grill and top with bacon bits and green onions.
