Red Skin Potatoes
quartered

olive oil

garlic powder

4 ounce can sliced black olives, drained

cup
feta cheese
2
stalks celery
chopped
2
tablespoons
red onions
finely chopped

tablespoon
Dijon mustard

teaspoons
apple cider vinegar

non-fat Greek yogurt
1/4
cup
low fat mayonnaise
1/4
cup
fresh parsley
chopped
1/4
teaspoon
onion powder
1/2
teaspoon
garlic powder
salt and black pepper
Instructions
Preheat oven to 400°F.
Add potatoes to a microwave safe dish with about 2 tablespoons of water. Heat in microwave for about 10 minutes on high.
Place potatoes on a large aluminum foil lined rimmed baking pan. Drizzle with olive oil and garlic powder.
Roast for about 30 minutes or until golden brown and tender.
Combine remaining ingredients and stir in cooled potatoes.
Refrigerate at least 4 hours before serving.
