Healthy Greek Yogurt Potato Salad

Ingredients
  

  • 2 pounds Red Skin Potatoes quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 4 ounce can sliced black olives, drained
  • 1/4 cup feta cheese
  • 2 stalks celery chopped
  • 2 tablespoons red onions finely chopped
  • 1 tablespoon Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 3/4 cup non-fat Greek yogurt
  • 1/4 cup low fat mayonnaise
  • 1/4 cup fresh parsley chopped
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt and black pepper

Instructions
 

  • Preheat oven to 400°F.
  • Add potatoes to a microwave safe dish with about 2 tablespoons of water. Heat in microwave for about 10 minutes on high.
  • Place potatoes on a large aluminum foil lined rimmed baking pan. Drizzle with olive oil and garlic powder.
  • Roast for about 30 minutes or until golden brown and tender.
  • Combine remaining ingredients and stir in cooled potatoes.
  • Refrigerate at least 4 hours before serving.
