Ingredients

bulgur
2/3
cup
barley

15 ounce can low-sodium vegetable or chicken broth
1
15 ounce can black beans, drained and rinsed
1
cup
baby carrots
chopped
1
bell pepper
finely chopped (any color)
1
medium onion
finely chopped
2
celery stalks
chopped
1/2
teaspoon
garlic powder
1/2
teaspoon
dried thyme leaves
salt and black pepper to taste
Instructions
Preheat oven to 350°F.
Add all ingredients to a casserole dish (9 x 13). Stir just to combine and cover with aluminum foil.
Cook for a total of 1 hour and 20 minutes, stirring every 30 minutes.
