Slow Cooker Cheesy Chicken & Brown Rice

Ingredients
  

  • 1 pound chicken tenderloins about 8 tenderloins
  • 2 cups frozen mixed vegetables I thawed mine slightly first
  • 1 red onion chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • black pepper and salt to taste
  • 1 10 1/2 ounce can cream of chicken soup
  • 1 cup skim milk
  • 2 cups cooked brown rice
  • 2 cups 2% shredded sharp cheddar cheese

Instructions
 

  • Place all ingredients except the milk, rice and cheese in the slow cooker.
  • Cook for 8 hours on low or 4 hours on high.
  • Remove chicken and shred, then place back into the slow cooker along with the milk, rice and cheese.
  • Cook until cheese is thoroughly melted.
